EASY BLUEBERRY CAKE
Suomen Mökkivuokraamo is a family business, so when we’re not busy helping people find cottages, we’re busy doing family stuff. One of the things we like to do as a family is make cakes. We especially like making cakes with berries in them, because not only are berries tasty, nutritious and free to gather from the forest, but we’ve usually got a freezer full of them and they need using up. Anyway, berry season will soon be in full swing here in Finland, so here’s a simple and quick recipe for a blueberry cake. We like using blueberries, but it works just as well with raspberries, lingonberries, or rhubarb.
2 ½ dl sugar
5 dl plain white flour
3tsp baking flour
2tsp vanilla sugar
150g of baking margarine (or softened butter)
400g of berries (or 1l of chopped rhubarb)
Heat the oven to 200C. Beat the eggs and sugar together with an electric whisk until they look foamy. Add all the other dry ingredients and stir carefully into the mixture. Add the milk and margarine and mix well. Line a baking tray with baking paper and pour on the mixture. Spread the mixture out evenly and then sprinkle the berries on top. Bake for around 20 minutes or until the cake looks ready. Once out of the oven, leave the cake to cool for a few minutes and then use a pizza wheel to cut the cake into squares. Serve with vanilla sauce.
